I den periode er vandet dejligt koldt og der er ingen fare for forurening fra giftige alger. <\/p>\n\n\n\n<p>Tjek hver enkel musling inden de bruges. Kom dem i en balje med koldt vand og tag dem op \u00e9n af gangen. Skallen skal v\u00e6re intakt og lukket. Hvis skallen er \u00e5ben, skal den lukke sig, n\u00e5r du banker den let mod k\u00f8kkenbordet et par gange. De muslinger der er \u00f8delagte, eller bliver ved med at v\u00e6re \u00e5bne skal smides ud. <\/p>\n\n\n\n<p>Er der muslinger med &#8220;sk\u00e6g&#8221; &#8211; alts\u00e5 noget trevlet fiber-agtig der stikker ud mellem skallerne, s\u00e5 fjern det med fingrene eller en ny skuresvamp. <\/p>\n\n\n\n<p>N\u00e5r muslingerne er dampet skal de muslinger der ikke har \u00e5bnet sig undervejs ogs\u00e5 smides ud.<\/p>\n\n\n\n<p>Hvidvinen der bruges i opskriften skal v\u00e6re frisk og med en let syre.
